Cyprus in winter is a really good idea. Not only because it is less crowded but especially because the island still has wonderful temperatures with lots of sunshine. Ideal for doing all the things you like to do. Hiking in the Troödos Mountains, soaking up culture in Paphos and having lunch in the sun. Indeed, lunch in the sun, even in December or February when we in Belgium are long tired of the cold, short days and longing for the first rays of sunshine.
