In 1896, the Fink family took over a former butcher shop in the pedestrian zone of cozy Brixen, one of the oldest towns in South Tyrol. The medieval center is characterized by arcades and alleys with traditional stores, bars and restaurants. In 2023 Petra and Florian Fink renovated the beautiful mansion with great respect for the historical elements of the building. Their philosophy is based on sustainable thinking and action. Only sustainable, ecologically produced raw materials were used for the renovation and decoration: natural materials for the insulation, plaster and paint made of lime and local - preferably old - wood. The self-designed furniture is made entirely of wood - down to the dowels and screws - and is therefore completely recyclable.

With this card you can travel by train or bus to all South Tyrolean attractions and use various cable cars that take you to the most beautiful places in the Dolomites. NICE TO KNOW

Chef Florian owes his extensive knowledge of the preparation of vegetables and herbs, stews, bread to his mother Antonia and to his collaboration with the convent gardens. His kitchen concept emphasizes naturally grown ingredients of traceable origin. Food scraps, such as the green tops of carrots and fennel, the outer leaves of a cauliflower, he uses for sauces, pesto, toppings and soups. Food leftovers from the restaurant are delivered to monasteries that donate the food to the less fortunate.

About the rooms

The spacious suites feature centuries-old stone walls, vaults, bay windows and/or ceiling frescos. The designer décor is based on the power of simplicity, with wooden furniture, quality fabrics and carefully chosen accents and accessories. The bathrooms have twin basins, a rain shower, a hairdryer and bathrobes.

Enjoy a refreshing swim

The hotel has no swimming pool, but via the free Brixen Card you can make free use of the various pools of the ‘Aquarena’ water park, located about 1 km away, including a children's pool and a pool with slide, for three hours a day.

Work out and wind down

Make free use of the wellness centre including a sauna and a steam bath with aromas based on herbs from the Brixen monastery garden. Furthermore, you can relax in two Roman baths with cold and hot water and in the relaxation room. Cycling enthusiasts can rent e-bikes and mountain bikes. Guided visits to the city are available on request. Every week on Wednesday and Saturday there is a farmers' market in town, where local farmers sell their fresh produce. Be sure to visit the ‘Duomo’ with its two characteristic towers and the nearby cloister with beautiful paintings by local artists from the 14th, 15th and 16th centuries.

In the morning, the hotel serves an extensive breakfast à la carte, including freshly prepared local delicacies. In the afternoon, lunch is available. In the restaurant, Chef Florian draws on the cuisine of the monks. They swore by a simple and natural preparation of a dish with emphasis on taste and health. He prepares his dishes based on daily fresh products, sourced from the city's monastery gardens or nearby farms. The focus is on ingredients of vegetable origin. There is a wide choice of vegetarian and vegan dishes. Meat and fish are offered depending on availability, a core element of the sustainability concept. The restaurant is closed on Sundays and Mondays, in July and August only on Sundays. In good weather, you can enjoy your meal under the arcades.
